Mumbo Sauce Wings

The quintessential DC condiment meets crispy fried wings.

Ingredients

  • 2 lbs chicken wings, separated into flats and drumettes
  • 1 cup ketchup
  • 1/2 cup rice vinegar
  • 1/3 cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. 1

Make the mumbo sauce: combine ketchup, rice vinegar, sugar, soy sauce, hot sauce, garlic powder, and onion powder in a saucepan. Simmer over medium heat for 10 minutes, stirring occasionally, until slightly thickened. Set aside.

  2. 2

Pat wings dry and season with salt and pepper.

  3. 3

Heat vegetable oil to 375°F in a deep pot or fryer.

  4. 4

Fry wings in batches for 10-12 minutes until golden brown and cooked through. Drain on paper towels.

  5. 5

Toss hot wings in the mumbo sauce until well coated.

  6. 6

Serve immediately with extra mumbo sauce on the side for dipping.

Mumbo sauce is to DC what ranch is to the Midwest — it goes on everything. This sweet, tangy, slightly spicy condiment has been a staple of DC’s carryout culture since the 1960s. Our version pairs it with crispy fried wings for the ultimate DC appetizer.
