Mumbo Sauce Wings
The quintessential DC condiment meets crispy fried wings.
Ingredients
- • 2 lbs chicken wings, separated into flats and drumettes
- • 1 cup ketchup
- • 1/2 cup rice vinegar
- • 1/3 cup sugar
- • 2 tablespoons soy sauce
- • 1 tablespoon hot sauce
- • 1 teaspoon garlic powder
- • 1 teaspoon onion powder
- • Vegetable oil for frying
- • Salt and pepper to taste

Make the mumbo sauce: combine ketchup, rice vinegar, sugar, soy sauce, hot sauce, garlic powder, and onion powder in a saucepan. Simmer over medium heat for 10 minutes, stirring occasionally, until slightly thickened. Set aside.

Pat wings dry and season with salt and pepper.

Heat vegetable oil to 375°F in a deep pot or fryer.

Fry wings in batches for 10-12 minutes until golden brown and cooked through. Drain on paper towels.

Toss hot wings in the mumbo sauce until well coated.

Serve immediately with extra mumbo sauce on the side for dipping.
